Cañabota Michelin one-star restaurant is located just outside the historic centre of Seville and offers delightful, innovative gastronomic dishes created by chef Julio Fernández Quintero. The restaurant itself seats 28 diners at a time, but can accomodate up to 55 for group bookings and special events planned in advance.

Nintai restaurant Marbella

At this tiny Japanese Michelin one-star restaurant, a maximum of 12 diners can have a nine or ten-course meal, including mushimono and nimono (steamed and simmered dishes), shirumono (soup), niguiri sushi (rice topped with raw fish), and dessert.

Dama Juana

Dama Juana, which opened in March 2019, is named after the grandmother of chef-owner Juan Aceituno. Sadly she died just two weeks after the restaurant in Jaen’s barrio San Ildefonso opened. Eight months after opening, Dama Juana was awarded a Michelin star.

José Carlos Garcia restaurant Malaga

José Carlos Garcia Michelin one-star restaurant in Malaga cityLocated in the port of Malaga, with a contemporary design and a stunning terrace, this eponymous restaurant offers stunning dishes such as hake with beetroot and caviar gazpachuelo. The cuisine on offer represents the gastronomic culture of this region of Andalusia, with quality ingredients being selected and brought from both the vast in land area of Malaga as well as its magnificent seafronts.

Sollo

Sollo's head chef Diego Gallegos specialises in sturgeon, caviar and river fish and subsequently bears the name "The Caviar Chef". The restaurant has a special menu which changes seasonally. Even before the ordering of food begins you are invited to taste the different caviar on offer, either to experience the unique flavours.

Messina restaurant Marbella

Messina Michelin one star restaurant has been delighting guests with two tasting menus since opening in 2001, under its Iialian chef Mauricio Giovanini, and gained its Michelin star in 2015. Dishes include king prawns with cream of polenta and tomato, and Iberian pork loin with cream of lentils and roast spring onions.

El Lago restaurant Marbella

El Lago Michelin one-star restaurant in Marbella is beautifully set overlooking a lake and golf course, in a smart residential development, this is as slick as you’d expect for such an upmarket location. Chef Diego del Rio’s dishes include tuna tartare with ajoblanco of kimchi, apple and crunchy quinoa, or pigeon with puree of carrots, honey bread and soy and hazelnut sauce.

Skina restaurant Marbella

Small restaurant in the old town run with chef Mario Cachinero at the helm, boasting two Michelin stars since 2019, (it won the first in 2008). You might find poached lobster, red quinoa and celeriac, or roasted rabbit served with mustard and parsnips. Closed on Mondays. Calle de Aduar, 12, Marbella.

Alejandro

Run by head chef Alejandro, exquisite presentation and bursting flavours make this restaurant what it is - an absolute delight and an experience in itself. The restaurant sources ingredients for its food locally; advantageously positioned next to the port of Roquetas de Mar, where the chefs have a wide variety of freshly caught seafood to choose from for preparation of their dishes.

La Costa

Dating from the 1960s, this restaurant in a small town just inland from the Almeria coast, specializes in fabulous fresh fish caught locally, and the vegetables grown in the surrounding area. Chef Jose Alvarez cooks up such delights as millefeuille of El Ejido courgette, liver, boletus and mi-cui, and carpaccio of red prawns from Almeria with olives and extra virgin oil.

Choco

Kisko Garcia's restaurant Choco offers authentic Andalusian cuisine with the chef's own unique style and twist. There is a clear focus on creativity by the head chef and his team, reflected in the dishes which are a combination of traditional and modern elemnts of well known plates in the region.

Noor restaurant Córdoba

Chef Paco Morales, who worked at Mugaritz and El Bulli, conjures up dishes from Andalucia's long multicultural history - cocina andalusi. He was awarded a Michelin star in 2016, followed by a second star in 2019. His passion is the region's forgotten gastronomic heritage, focusing on the Arab period in the 10th century when Cordoban caliphate was at the peak of its power.

Bagá

Tiny Michelin star restaurant (as of the 2019 Guide) which seats just 15 diners, run with great care, effort and attention to detail by head chef Pedro Sánchez Jaén (known as Pedrito to avoid confusion with his political namesake). The restaurant opened in September 2017, and is the first restaurant in Jaén province ever to win a star.
