Dama Juana Restaurant, Jaen – one Michelin star

Dama Juana, which opened in March 2019, is named after the grandmother of chef-owner Juan Aceituno. Sadly she died just two weeks after the restaurant in Jaen’s barrio San Ildefonso opened.

Eight months after opening, Dama Juana was awarded a Michelin star.

Juan’s cuisine is inspired by traditional classics, cooked by grandmothers across Spain, such as fabada (bean stew), callos (tripe) and cocido (meat and legume stew).

Two menus are offered, one long and the other shorter. Typical dishes include pigs’ ears with avocado, dried tomato salmorejo with smoked sardines and aniseed biscuit, partridge fritters, and lentils with lamb sausage and caviar.
